Egg – Hash Brown Casserole Recipes

Ingredients for hashbrown egg brunch Recipes

2 c. hashbrowns
4 c. hot water
5 eggs
½ c. ricotta cheese
1 c. shredded Swiss cheese
2 to 3 tbsp. minced onion
salt and pepper to taste
paprika

Cooking Method

Pour boiling water over hash browns. Let stand 10-15 minutes. Drain well. Beat eggs, add potatoes and all other ingredients except paprika, which you sprinkle on top. Pour into 9-inch pie pan. Refrigerate overnight.
Place cold pie pan uncovered in cold oven. Bake at 350 degrees for 30-45 minutes or until potatoes are tender, and the pie is set. Good for breakfast.
